Cornbread is a great sweet or savory treat. Add a bit of sugar and it’s a sweet cake. Reduce the sugar and add green chilies, bacon and cheddar cheese and it’s a whole different dish.
1 – 2 cups cooked, crumbled bacon,
1 cup cheese
1 can chopped green chilies.
Stir into finished corn bread batter or try it as a topping.
Note on buttermilk:
If you don’t have buttermilk you can reduce the milk by ¼ - ½ cup since real buttermilk makes the batter thicker. To make your own buttermilk, simply add 1 Tb of lemon juice or vinegar (gf) per cup of milk. Let the mixture stand at room temperature for 5-10 minutes.
Vegan version: Use egg replacer for 2 eggs, alternative milk like almond or coconut where it calls for buttermilk and increase vinegar to 1 tsp.
