Carrot Cake

This carrot cakes has consistently got rave reviews.  It’s super moist and has the perfect blends of spices.

Try these variations:

  • Carrot Cake with Walnuts and Raisins:  Add 1 cup each of walnuts, (or pecans) and raisins.
  • Carrot Pineapple cake:  Add 1/2 – 1 cup drained, crushed pineapple.
  • Carrot Coconut Cake:  Add 1 cup shredded coconut.
Vegan version: Add the following to replace just the eggs.  Use egg replacer equal to 4 eggs, 1 tsp vinegar and add 1 cup of apple sauce to wet ingredients.
